One of my June goals was to try to cook two recipes that are high protein/low carb or no carb, and I tried one with my son Barry on 03 June. I found this recipe on Facebook of all places. Madelaine Rascan has a reel on Facebook where she is making the viral cottage cheese wrap that I am sharing with you today. I discovered today that she also shared the same video on Youtube, so I will share that video with you at the end of this post.

Full disclosure, I did not follow the directions exactly the way Madelaine was trying to teach me in her video because I was SUPER excited and not paying attention, so I accidently doubled the ingredients. Thankfully, it worked out since Barry and I both wanted to try this wrap. We each had our own wrap instead of having to split one.

Ingredients

  • 225 grams of cottage cheese *
  • 2 eggs
  • any seasonings *
  • grated Parmesan cheese *
  • healthy favorites for stuffing the wrap

* Note: For cottage cheese, I used Mayfield Dairy Farms Lowfat Cottage Cheese 1% Milkfat that I found at Target. For seasonings, I used a bit of salt and garlic powder. I did not add grated parmesan cheese.

Directions

  1. Preheat oven to 350 degrees.
  2. Blend cottage cheese, eggs, and seasonings in a blender UNTIL smooth NOT runny.
  3. Put parchment paper on a baking pan.
  4. Pour mixture on the parchment paper in a circular motion by starting at the center, and working it around in a circle slowly. Don’t make it too thin.
  5. Gently press the mixture out to the side in the shape of a flatbread. Again, don’t make it too thin.
  6. Put it in the oven for 30 or so minutes or until golden brown to avoid mushiness inside.
  7. Let it cool for about 5 minutes before removing the wrap from the parchment paper.
  8. Stuff the wrap with your healthy favorites and cut it in half.

Since there is a good amount of protein (about 37 grams) in the cottage cheese wrap, I stuffed mine with one mini cup of Wholly Avocado Organic Smashed Avocado with Sea Salt (57g), tomatoes, and about 1/3 cup of shredded mild cheddar cheese. It was delicious!

I will definitely make this wrap again. However, I think I will add one more step next time. When I pull it out the oven, instead of letting it cool for 5 minutes and stuffing it right away, I will let it cool enough that I can pull it off the parchment paper without ripping it. Then, flip it over on the parchment paper and bake for another five minutes. Also, I will NOT blend it to death like I did the first time because the mixture got too runny. Excitement will do that to you, dear reader! Thankfully, I used a circular pan which contained it from spreading too thin on the pan.

Halfway Day (July 2nd) has come and gone, and it is time for me to evaluate my progress on my 26 for 2026 List for the second quarter (April, May, and June) of this year. The past three months flew by, and I feel like I have barely made a dent in my list. However, I felt the same way when I did my First Quarter Review and was surprised by how many aims I had started. Very few of my aims are one and done, so I have to realize that most of them will take longer in general to complete. Out of the 26 items on my list, I have started 12 aims or activities and completed three activities.

I completed my first activity, #22 Vincent van Gogh Conqueror Challenge, during the first quarter on Monday, 30 March (Vincent van Gogh’s birthday). I received my medal later in April, and it is absolutely beautiful. It also opens and includes three mini cards of Van Gogh’s paintings. I love it!

On May 8th, I completed #4 Dermatology Appointment. And, on June 19th, I completed #13 Massage. I am thrilled to have checked off both of these aims. My dermatologist biopsied two moles (one was fine; the other had precancerous cells). She also recommended that I get my thyroid tested based on my skin check and concerns. My bloodwork was scheduled for July 9th, and a follow-up appointment with my dermatologist has been scheduled for mid-November. The massage was AMAZING, and I would love to get another one later in the year.

I continue tracking everything I am doing for my Alphabet Adventures. In April, I went on 2 major outings that also included mini outings for Old School April (Lakeside Mall and Colonial Lanes). In May, I went to our local movie theater with my hubby to see Hokum. In June, I attended a 3-Day Workshop at the Columbia Theatre, a Junk Journal Class at the Albany-Springfield Library, and the annual TAC Scrapbooking Event at the Airport Hilton.

For Clutter Clear 123, I decluttered half of my scrapbook room, so that I could prep and pack for the TAC Scrapbooking Event. I still have the other half to declutter and organize. I have done NOTHING in the kitchen or my bedroom closet.

As for Finances 101, no budget yet, but I am still keeping track of my book spending. I spent a total of $351.85 on 38 books for myself/channel. I bought 10 less books and spent $83.38 less than I did the first quarter of the year. I spent $102.27 on 12 books for gifts. I bought 16 less books and spent $37.29 less than I did the first quarter of the year. However, I spent more on books for my son Andrew. I am not sure how many books he purchased overall, but his total came to $315.93 ($172.87 more than last quarter). A few of the books that he purchased were for theological study. I continue to keep track of how much money I am saving by using my libraries as well as how many free books I am receiving from friends, Scholastic, and the FOTL store.

My Home Library is still a work in progress. I am hoping to make HUGE strides in July.

I filmed/released 5/26 videos (3-April/2-May) on my YouTube channel, Kat’s Novel Adventures. I released the same number of videos as last quarter, bringing my total for the first half of the year to 10/26 videos. As for Scrapbook Sessions, I had 4/26 at the TAC Scrapbooking Event I attended in June with Donna, Heather, and Kelsi. This brings my total to 8/26 scrapbook sessions for the first half of the year. As for my Writing Sessions, I wrote 6/26 blog posts (1-April/5-June). This brings my total for the first half of the year to 9/26 blog posts.

I had 2/6 Lunch Dates with Friends. I had lunch with WYES-TV friends (Kelsi, Michelle, and Robin) at Deanie’s in May. Donna, Heather, Kelsi, and I had lunch together three times during the TAC Scrapbooking Event. We went to Zea’s Rotisserie & Bar, Don Jose’s Grill, and LaSalle Restaurant and Bar at the hotel where we were staying/scrapbooking for the event. This brings my total up to 4/6 lunch dates with friends for the first half of the year.

Barry and I did NOT watch one episode of The X-Files: Season 1 during the second quarter which makes me unhappy. Therefore, we are still at 1/24 episodes. If Barry does not step up during the third quarter, I will complete season 1 on my own. I also did NOT unhaul any books or listen to another episode of the Zero to Well-Read Podcast.

Regarding my other projects for the year, I continue to move at least 26 minutes every day for the #Move26in26 Challenge. I am still on track with my Goodreads Challenge. I read 26/100 books (April-June) which was one less book than last quarter. So, for the first half of the year, I have read 53/100 books. However, I am still extremely behind on writing my book reviews.

As for YouTube, I continue to host my weekly Wednesday and Saturday sprints. I am also keeping up with buddy reads, book clubs, and the 2026 Read Your Bookshelf Challenge. I cohosted Old School April in April and hosted Zombiethon in May. I also participated in week one of the Summer Spooks Readathon during the last week of June. I started two summer readathons in June, Summer Book Bingo and Big Book Summer. As you can see, dear reader, I spent a good chunk of the second quarter on YouTube-related activities, mainly surrounding reading. With that being said, I did watch a lot of movies for Old School April and Zombiethon for my Alphabet Adventures project. I watched 26 movies (one for each letter of the alphabet) for each event. It was challenging, especially the 26 zombie movies.

Well, dear reader, that is my second quarter review of my 26 for 2026 List and the other projects I am participating in this year. I have 11 aims that I have not even started yet. I have thought about them from time-to-time, but I have not made the time or effort to execute any of them. We are at the halfway point of the year, and I need to kick it up a notch if I want to complete the aims that I have started and make some progress on the aims that I have not started. Hello, dear reader! June has officially ended along with my Just Do It June Challenge where I wanted a month to reset, refocus on me, and realign a few of my habits and routines while trying out a few new ideas. I gave myself 10 goals for the month, and I feel like I did well overall. Out of those 10 goals, I accomplished 6 of them (gold star), completed 1/2 of one, went in a different direction with one, and missed the boat on 2 of them. On Monday, I updated you on my Week 4 results, but I still had two days left to track in June, so I will include those stats in this wrap-up as well.

Goals for June

  • Time-Track the entire month. Eliminate scrolling mindlessly on social media. ⭐
  • Keep a food journal for the entire month. Primary focus is to cut out added sugar and sugary processed foods. ⭐
  • Try to cook at least 2 recipes that are high protein/low carb or no carb. (completed 1/2)
  • Add running intervals to walking routine at least 3 days per week. ❌
  • Complete gut protocol (Spa728). ⭐
  • Complete BODI For Beginners Only Block 5. ⭐
  • Get a massage. ⭐
  • Declutter/Organize Scrapbook Room to prep for annual scrapbooking event this month with friends. ⭐
  • Work on establishing a consistent Wake-Up time. ❌
  • Find a primary care physician that aligns with my healthcare goals. Started this process in May. (went in different direction)

For the last two days of June, I spent 24 minutes specifically playing on my phone and scrolling on social media. I did not exceed my daily allowance of added sugar. I consumed 15.7 grams on Monday and 8.67 grams on Tuesday. In addition, I completed my gut protocol yesterday.

I did not find a primary care physician due to a few stumbling blocks. However, I ended up going in a different direction to get the ball rolling on my healthcare goals. On Monday, 29 June, I sent a message to my gynocologist asking her if she could put in orders for bloodwork to check my thyroid as well as my cortisol level. Thankfully, she put in the orders for me, and I scheduled my labs yesterday morning for Thursday, 09 June. I had a feeling she could order the bloodwork since she ordered bloodwork for me back in December 2022, and I had recently seen her for my well-woman visit in March of this year. The results of those labs will determine my next steps.

One of the two goals I did not complete was adding running intervals to my walking at least 3 days per week. As you know if you have been following my challenge, I injured both knees during one of my BODI workouts, and it took some time for them to heal. I basically scrapped this goal for the rest of the challenge. I am grateful that my knees feel back to normal. Going forward, I will be modifying or eliminating certain exercises that could potentially cause that injury again. I was disappointed with my results with this goal, but I am glad I listened to my body.

The other goal that I did not complete was working on establishing a consistent Wake-Up time. I failed miserably, and this EPIC fail is all on me. I can give you a litany of excuses, but I will not waste your time or mine. On Monday, 29 June, I woke up at 7:57 AM which is the latest I had woken up for the entire month of June. And yesterday morning, I was up at 6:27 AM. I am not sure what it will take to get my act together in this area of my life.

What’s Next?

I have decided not to do a July challenge. Instead, I want to continue the momentum with tracking social media usage and added sugar consumption. I plan to cook the other recipe I found that is high protein/low carb or no carb. I also found a couple of healthy recipes that involve a waffle maker. I want to focus a bit more on the aims on my 26 for 2026 List, add those running intervals to my walking routine, and choose a new BODI program for the month. Lastly, I will take the necessary next steps on my healthcare journey when I receive the results of the bloodwork I am having done next week.

I finally got a much-needed massage, cut back on social media scrolling and added sugar, and took actionable steps toward improving my health.
